Veal with mushrooms, garlic,& white wine

1  lb.		veal cutlets
2  tablespoons		Flour
1  tablespoon		oil
1  teaspoon		Garlic, minced
12  ounces		white mushrooms
1  cup		dry white wine
1  cup		fat free chicken broth
1  teaspoon		Tarragon
1/4  cup		Parmesan, shaved
1  ounce		Salt & pepper to taste

Put oil in non stick skillet
Dredge veal in flour with salt & pepper
Over med-high heat brown veal on both sides
Take veal out of pan & cover to keep warm
Add mushrooms to pan & cook until darkened
Add 1 Tbsp. Flour to mushrooms after they start darkening, & give off juices
When mushrooms are cooked add white wine cook until reduced by half
Add chicken broth & simmer until sauce starts to thicken
Add veal back into sauce, cover & simmer until veal is done, about 2 min.
Uncover & simmer for another minute
Add Parmesan cheese, then serve.
