Saute onions, celery and green pepper in olive oil. Add tomato puree and simmer 5 minutes. Remove from heat and stir in herbs and spices. Gently fold in brown rice and burger crumbles.

Parboil whole pepper for 8 minutes. Cut in half and clean out seeds. Stuff each half with rice mixture. Top each half with one slice soy cheese. Place peppers in baking dish and bake at 350ºF for 20-25 minutes.
