Coarsely chop veggies and saute with 2 tbsp butter, oregano and garlic until crisp-tender.

Add two eggs to ricotta, set aside.

Make white sauce by melting 3 tbsp butter, add flour. Cook for one minute before whisking in milk. Simmer until thickened. Take off the heat and stir in parmesan.

Create two layers of noodles, veggies, ricotta and sauce. Top with mozzarella and bake for 45 minutes at350.
