Bring rice, chicken broth, 1/2 tbsp butter, and salt to a boil. Reduce heat and cover, cooking according to package directions.

For the saute:
Meanwhile, prep your veggies and start the saute. In a large saute pan, melt 1 tbsp butter and add garlic and onions and saute on medium high heat for 5-8 minutes.

Add cooked rice to garlic and onions and stir in the remaining ingredients. Continue to cook on the med-high heat for another 5-10 mins or until most of the liquid has evaporated.

Remove from heat and serve.
