Directions:  
In a bowl, combine the flour, oats, baking powder, basking soda, salt, cinnamon, nutmeg, and ginger. In another large bowl, beat together the eggs and butter. Add the applesauce, milk, zucchini, and carrot, and mix well. Stir into the dry ingredients. Place the batter into 2 buttered 8 x 4 inch (1.5 L) loaf pans. Bake at 350 degrees F (180 degrees C) for 45 to 50 minutes or until a toothpick comes out clean when inserted into the centre. Cool on a wire rack before serving. Makes 2 loaves.
