Directions:  
preheat oven to 300F

sift together sugar, splenda, peanut flour, and almond meal at least twice.

beat egg whites with salt and cot until firm peaks. fold in the sugar/almond mixture no more than 50 folds.

pipe into 1-inch rounds on parchment lined paper

bake about 15 minutes until come off pan easily and have feet but not brown on bottom

put two cookies together with frosting, jelly, or chocolate, or whatever!
