1  cup		oat bran
1/2  cup		water
1/2  cup		almond milk
1  cup		sour cream
2		egg, beatens
1/4  cup		coconut oil
3/4  cup		whole wheat flour
1/4  cup		coconut flour
1-1/2  teaspoons		baking powder
1  teaspoon		baking soda
1/2  cup		walnuts
6		dried apricots
6		dried dates
1/4  cup		banana
2  scoops		protein powder
1  teaspoon		vanilla extract
1/2  cup		frozen berries

Preheat oven to 375 degrees F.

Combine oat bran, water (hot) or soak oat bran n water for 3 hours . Add, milk and sour cream. Stir well.

Stir together egg and oil and add to oat bran mixture

Sift together flours, baking powder, baking soda,protein powder, and cinnamon. Stir into oat bran mixture just until all ingredients are moistened.

Spoon mixture into lined muffins tins, filling 2/3rds full.

Bake 25 minutes or until lightly brown.
