Directions:  
heat oil in non stick skillet over med-high heat. add carrot, onion, celery & cook about 5 min. stir in garlic, cook about 1 min. more. add broth, tomatoes, bring to a boil. add barley, mushrooms, & pepper. cover & reduce heat & simmer 40 min. stir in zucchini, & cook about 5 min. more or until zucchini is tender. Season to taste. sprinkle cheese 1/2 tbsp./serving on top of soup.
