mix flour, oatmeal, baking powder, baking soda, and salt in large bowl;
set aside

soften coconut oil and Smart Balance

blend egg, vanilla, sugars with oil and Smart Balance
4
add to dry ingredients and mix
5
stir in chocolate chips (and optional coconut flakes)
6
roll into 1 1/2" balls spaced about 2 in apart when on cookie sheet
7
bake at 350 F for about 10 minutes

carefully remove cookies to cutting board for initial cooling

after stiffening move to drying rack to cool thoroughly
