Description: adapted from July 2018 Relish magazine. Reduced amounts and cut portions. It's really tasty, and I put it on a Flatout Foldit. Will make 3 to 4 sandwiches.

Directions:  
Remove pit from avocado and roughly chop. Mash avocado with a fork in a bowl. Add 2 peeled and roughly chopped hard-boiled eggs, 2 Tbsp pain Greek yogurt, 2 Tbsp Dijon mustard, 1/4 cup chopped onion, 1/4 cup diced celery and 2 Tbsp lemon juice. Gently mix until combined. Sprinkle with salt, pepper, and red pepper flakes (if using), to taste.
