Directions:  
separate yolks from two eggs, add 1 whole egg, blend well, set aside
chop mini sweet peppers into to small pieces
using a nonstick pan stir fry the peppers until tender, add the egg mixture and pepper, heat the tortilla, place egg mixture on top of the tortilla roll as you would for a burrito.
