heat coconut oil in pan

add cauliflower, broccoli slaw, brussels sprouts, zucchini, mushrooms, garlic, and onions in 1/4 batch and sautee

cover and let cook for 5 minutes

add salt and sriracha and mix

add 2-3 big handfuls of spring mix, cover and let cook for 5 minutes

sautee and mix, then push veggies out to the edges of the pan leaving an empty space in the middle

pour eggs and egg whites in the middle

scrape egg curdles. once the bottom is cooked, mix in with veggies
