Directions:

Wash sweet potatoes, cut in half, and place cut side down on parchment paper on a baking sheet. Bake at 350 for about 45 minutes. Let cool.

Cook quinoa according to directions.

Saute chopped veges. Add minced garlic and spices and cook for a minute more.

Scoop out insides of sweet potatoes. Add quinoa, beans and veggies.

Put mixture back into sweet potato shells.
Optional: 1/2 C. cheese in mixture plus 1/2 C. cheese on top. OR try orange juice concentrate rather than spices.
