Directions:  
1- Heat the vegetable oil in a saucepan.
2- Add shallots and chopped garlic. Saute 2 min.
3- Stir in soy sauce, ketchup, peanut butter, maple syrup, vegetable broth. Mix well.
4- Add tofu, bring to a boil, let the sauce reduce and thicken.
5- Serve over rice with chopped scallions or coriander leaves.
