Description: Use to make a low-salt, low-fat soup base by simmering the carcace of a small store bought rotisserie chicken with carrots, celery, onions, etc, and seasoning with bay leaf, thyme, pepper.

Add broth and water to pot.

Add your choice of veggies. We use 2-3 carrots, 2-3 stalks celery, 1/2 large onion. All coarsely chopped.

Add chicken carcase. We remove the breast meat. The rest goes in.

Season. We use 2 bay leaves, 1 tsp each of thyme and dill and about 1/2tsp finely ground white pepper. Vary to your taste.

Bring to boil, then simmer, covered for at least 2 hours. Strain. Discard veggies and skin and bones. The remaining meat can be used in soups or salads.

Cool in individual 1 qt. containers. Refrigerate overnight. Skim any fat.
