Heat oil in large skillet or wok. Brown chicken, add onion and celery and stir fry until crisp tender, about 5 minutes. Add the garlic and ginger and cook 30-40 seconds more.

Stir in chicken broth and sugar. Bring to a boil, reduce heat to simmer and cook for 2-4 minutes until vegetables are barely crisp tender. Add chestnuts and bean sprouts. Cook 2-4 more minutes until bean sprouts loose their crispness.

In cup, combine the soy sauce and cornstarch. Mix well. Slowly add to vegetables in skilled over medium heat until sauce comes to a boil and starts to thicken.

Serve over crispy chow mein noodles.
