Process 3/4 c of the flour, the sugar, and salt in food processor. Scatter the butter and shortening over the top and continue to process until incorporated and the mixture begins to form uneven clumps with no remaining floury bits, about 10 sec.

Scrape down the bowl and redistribute the dough evenly around blade. Sprinkle the remaining 1/2 cup flour and pulse until mixture has broken up into pieces and is evenly distributed around the bowl 4-6 pulses.

Transfer to medium bowl. Sprinkle the vodka and water over mixture. Stir and press dough together, using a stiff rubber spatula, until dough sticks together.

Turn dough onto a sheet of plastic wrap and flatten into 4-inch disk. Wrap tightly in plastic and refrigerate 45 minutes or up to 2 days. Before rolling the dough out, let it sit on counter to soften slightly, about 10 minutes.
