Mix all dry ingredients except, the coconut sugar and peanut butter chips, into a bowl and whisk.

Add all wet ingredients, except the coffee, plus the coconut sugar.

Mix and slowly add dry ingredients. In the meantime, boil your coffee.

Add coffee to the batter and mix on very low until just combined.

I used 1/4 cup measuring cup to get exactly 24 muffins.

Drop 10 peanut butter chips on each muffin, lessor none if you want less calories and fat.

Bake for about 14-15 minutes, until they just barely spring back when poked.
-You do not need to use brewed coffee or coffee at all, it just enhances the flavor. Just use plain water if you so choose. Also, instant coffees work great!
-You may also sub the chips with nuts or another chip of choice.
-I used Special Dark Cocoa but feel free to use what you have, regular cocoa has a little less bitterness.
