Directions:  
Heat oil on med heat, add chopped onion and cook until tender. Add rice and cook additional 3-5 minutes in just the onion and oil. Add water to cover rice. Bring to a simmer. Turn heat to low. Add dill and mint and simmer, covered, 35 minutes. Turn off heat and stir in Lemon juice. Let sit 15 minutes. Serve warm
