Directions:  
Fry garlic, onion and jalapeno in oil until softened. Add remaining ingredients except cilantro, lime juice and avocado; stir & cover. Simmer for about 20 minutes or until quinoa is cooked. Stir in lime juice, cilantro and avocado.
