Notes. Mrs. Wages salsa mix can be found in Walmart. Use fresh tomatoes skinned and peeled or canned tomatoes or combination of both to make 12 cups. Use any pepper mix you want, for mild to medium salsa I use 2 large jallepeno's, seeded and a sweet red pepper or whatever I have on hand.

Chop tomatoes, onions, garlic, and peppers to desired size or use a food processor on pulse to get the consistency you want.

Put all ingredients into large sauce pan (5-6 qt). Bring to a boil, reduce heat and simmer for 10 minutes.

Can be canned or frozen for later use. I pack in clean hot pint jars, and process in water bath for 20 minutes (3200 ft sea level)
