Preheat oven to 400 degrees

Put all ingredients, except cinnamon, in a large bowl and toss to coat

Spread on a single layer on a baking sheet (For easier clean up I lined mine with foil and gave it a light spray of cooking spray.)

Sprinkle with cinnamon (more or less according to taste)

Bake for about 10 minutes, stir, then bake for about another 10 minutes or until tender
