Directions:  
1.) Preheat oven to 375F
2.) Cut potatoes into medium chunks, peel and chop carrots, cut onion into larger pieces, mince garlic.
3.) Place all veggies in a large ziplock bag and with EVOO and coarse salt. Shake so everything is well coated.
4.) Place veggies in a medium size oven safe dish and put into preheated oven. Bake for 40 minutes or until potatoes are cooked all the way through.
