Description: Use cold leftover cooked rice,which works better when making fried rice. For the ginger use a 2 inch piece of ginger, minced. Add your favorite vegetables. Broccoli, peas, and carrots work well.

In a large skillet or wok over medium heat, heat the oil.

Add the onions and cook, stirring continously, for 3 to 5 mins, until it softens.

Add the ginger and garlic, and stir until just fragrant.

Add the shrimp and cook, stirring often, for about 5 mins. until the shrimp is opaque and nearly cooked through.

Stir in the snap peas and rice, stirring until mixed well and heated through. Serve.
