Preheat oven to 375 ° F. Line a large baking sheet with parchment paper.

Cut the spaghetti squash in half and remove seeds. Brush the flesh of spaghetti squash with 1 tablespoon of olive oil. Salt and pepper generously and place the squash flesh side of the parchment paper. Bake 45 to 60 minutes or until squash is tender.

Press the flesh of spaghetti squash to leave a little room for the stuffing. Stuff each squash stuffing and spread the cheese on each oka squash. Brown in the oven under the broiler for a few minutes or until cheese is lightly browned.
