Preheat oven to 250 degrees.

Butter a 9 x 13 pan and set aside.

Scatter bread in a single layer on a rimmed baking sheet. Bake, stirring occasionally, until dried out, about 1 hour. Cool, tranfer to large bowl.

Melt 3/4 cup butter in a large skillet, add onions and celery. Stirring often, cook until brown, about 10 minutes. Add to bowl along with herbs, salt and pepper. Drizzle in 1 1/4 cups of broth. Let Cool.

Preheat ov to 350 degrees. Whisk 1 1/4cups broth and eggs in a small bowl, fold gently into bread mixture. Transfer to prepared dish, cover with foil and bake about 40 minutes or 165 degrees .
