Directions:  
1.) Chop vegetables
2.) Saute in butter - first carrots and mushrooms
3.) Add onions, pepper, and celery
4.) Add squash and spinach
5.) Add water, tomato, and salsa and bring to boil
6.) Stir in seasoning and cous cous, return to boil
7.) Remove from heat and let stand 5 minutes
8.) Fluff with fork before serving
