In a medium pan, over medium heat, add diced onion and 2 tblsp of stock, Saute until onions are translucent.

Add carrots and apple, cover with remaining stock. Bring to a boil.

Cover, then reduce heat to simmer 15-20 mins or until ingredients are soft.

Add grated ginger and black pepper, simmer 10 mins.
Serve chunky or puree.
