combine olive oil, garlic and basil. Cook in microwave for 1 minute

slice peppers and combine with olive oil and spices. Cook in microwave for 1 minute

add couscous and cook for 1 minute in microwave

add chicken stock and cook for 1 minute in microwave

add finely chopped sun dried tomatoes

Let stand for 5 minutes

add almonds just before serving

add salt and pepper to taste
Can be served either cold or at room temperature (keeps well for 3 or 4 days)
