Directions:  
Preheat griddle to medium high
Separate eggs
Melt and cool butter
Mix egg yolks, ricotta cheese, butter
Add maple syrup and almond meal
Whip egg whites and fold into batter
Put 1/4 cup batter on hot griddle/flip when underside is brown (these are fairly delicate so care is needed when flipping)
Serve with black berries or raspberries
