Directions:  
Spray a saucepan with olive oil cooking spray and heat on medium. Add onion, celery, and carrots, sautéing for a few minutes, until they start to soften. Add in all remaining ingredients except beans. Bring to a boil. Reduce heat to low, cover, and simmer gently for 20 minutes. Add beans and simmer 10 minutes longer. Remove bay leaf before serving.
