BW Lentil Brownies

1/2  cup		dry lentils
4		eggs
2  cups		sugar
1  cup		canola oil
2  teaspoons		vanilla
1-1/2  cups		flour
1/2  cup		cocoa powder
1  teaspoon		salt
6  ounces		chocolate chips

Cook lentils in 3-4 cups of water for 40 minutes or until soft. Drain and cool slightly, mash.
Preheat oven to 350 degrees.
Spray a 9X13 cake pan.
Combine dry ingredients in a large bowl.
Mix the eggs, sugar, oil, and vanilla in a separate bowl.
Add the dry ingredients, lentil puree, chocolate chips to the egg mixture and stir until well combined.
Pour into prepared pan.
Bake 30-35 minutes. When done, a toothpick inserted into the Center of the pan should come out clean. Cool at least 10 minutes before cutting into 12 squares.
