Heat the oven to 375°F.

Cook the bacon in a large, ovenproof sauté pan. When the bacon is crisp, remove, drain on paper towels, and chop. Wipe the pan with a paper towel.

Chop onion and mince garlic. Heat the oil in the same pan. Add the onion and garlic and sauté over low heat for 12 to 15 minutes. Use vegetable cooking spray if you need more oil.

Add the shredded cabbage to the pan and stir. Add the beans, stock, and sage and bake, covered, for 20 to 25 minutes, stirring occasionally, until tender.

Meanwhile, in a medium saucepan, bring water to a boil. Peel potato and cut into 1-inch pieces. Place potatoes in pot and cover. Reduce heat to medium and cook for about 10 minutes or until tender but still firm. Drain and mash.

Remove cabbage bake from the oven. Remove the cover and bake an additional 10 minutes. Stir in the salt and pepper to taste. Sprinkle with the chopped bacon.

Meanwhile, grill pork chop. Enjoy cabbage with mashed potatoes and grilled pork!
