Directions:  
Peel and chop vegetables. Spray large soup pot with olive oil spray and heat over medium-high. Cook vegetables for 8 minutes, stirring to keep from sticking. Add broth and bring to a boil. Reduce heat and simmer for 10 mins. Add milk and cook for 10 more mins. In batches, transfer soup to blender and liquefy. Heath through gently and enjoy. Add parmasan or cheddar cheese if you wish.
