Directions:  
Place the turkey breast in a pan and cover with water. Bring to a boil then turn heat down,cover and simmer for 30 minutes. Place olive oil in a large pot and saute onions and carrots till tender. Add remaining ingredients. Season to taste with your favorite seasonings. When turkey is finished take out of pan and add liquid to pot. Chop turkey and add to pot. Simmer 1-2 hours. Cool
