Ingredients:  Makes 6 servings (6 each)

Directions:  
1.Peel the potatoes. Cut them into thick wedges and place in a large bowl with enough cold water to cover. Set aside.
2.In a small bowl, combine garlic, rosemary and sage, and pepper.
3. Rub roast with 1 tablespoon oil
4. Press the herb mixture on to roast top & sides, place in crock-pot
3.drain and pat dry potatoes. Pour 1 tablespoon of the oil in potatoes cover all sides place over roast
6. Either cook in crock-pot 8 hours or Bake at 400 20 min
7.Transfer the roast to a cutting board, cover it loosely with foil and let it rest for 10 to 15 minutes. Check the potatoes
which at this point should be tender and golden brown. If not roast them a little longer.
7.Cut the pork between the bones and serve with some potatoes and a bit of the pan juices.

You can add carrots or other vegetable to the crock-pot as well.
