Directions:  
1.Heat oil in stock pot
2.Add oil and brown until desire color for the roux
3.Add onion, green bell peppers, red bell peppers to the roux and cook until onions are clear. set aside.
4.Add 3 quarts of water to a large pot to boil the chicken. boil until chicken is falling off the bone.
5.Save the chicken stock and pick the meat from chicken and place in the roux.
6. Add the chicken stock to the meat/roux and add seasoning.
7.Seasoning -1T slap ya mama, 1T garlic salt, 2t parsely flakes, 1T onion powder, 2t garlic powder, 1T gumbo file.
