Pour lemon juice into measuring cup and add in 3% milk to make up one cup. Let stand for 10 min.

Whisk sugar and cocoa powder

Stir in flour, soda, salt

Make a well in the center

Whisk egg, milk and lemon mixture, oil, vanilla extract

Pour wet ingredients into flour mixture and whisk. Batter will be lumpy

Add in extra tablespoons of milk until you reach the right consistency (i.e. of pancake batter)

Heat oil in stove.

Pour batter onto stove 1/4 cup at a time.

Flip when brown and set, and cook on the other side.
