Place water and kale in pot. Sprinkle with chopped carrots.

Cut sausage into 6 equal pieces. Place on top of vegetables.

Bring to boiling point, cover, turn to low heat.

Cook/steam 10 minutes. Add water if needed to keep from burning.

Sprinkle individual servings with red wine vinegar if desired.

Can be done in a slow cooker on high for 2 hours, low 4 hours.
