Preheat oven to 400 degrees

In cast iron skillet heat olive oil then sear all sides of the pork loin

Put onions under pork loin then apples and sweet potatoes over and around the pork loin.

Sprinkle seasoning over the top and cover with aluminum foil

Bake for 45 minutes till pork loin is no longer pink and the sweet potatoes are soft

Left rest for 5 to 10 minutes before cutting into the pork loin and serving
