Description: Roasted Eggplant Pizza
Ingredients:  Makes 5 servings (10 slices)

Directions:  
ROASTED EGGPLANT PIZZA

2 - 1 pound eggplant.
1 - Tbsp. Italian Spices
1 - 6 ounce can Tomato paste (You will use 10 Tbsp.)
10 Tbsp. - Mozzarella Cheese grated.
Pepperoni slices. (Optional)

Oven 400 degrees

Slice eggplant into 1/2 inch slices.

Lay on baking sheet and spritz both sides with Olive Oil. (I use my Oil spritzer.)

Bake approximately 30 minutes until golden brown and tender.

Take out of oven and while hot add:

1 Tbsp. Tomato Paste over each cooked eggplant slice spread to edges.

Sprinkle with Italian spices to taste.

Spread about 1 tablespoon grated Mozzarella Cheese over each slice.

If you like add 2 slices Pepperoni slices per Eggplant slice but it adds calories fast.

Pop back into oven until hot and cheese bubbly and lightly golden.
