Begin with marinating the chicken with a few tbsp of olive oil and the lime. Add sea salt, pepper to taste. Season with 1tsp cayenne pepper and garlic powder.

Next, grill the chicken after it has marinated for about 15 minutes. The lime helps the chicken meat marinade and absorb flavors more quickly and efficiently.

Once the chicken is cooked, cut it up in to thin strips. Set aside.

Dice bell pepper and onions and set aside.
5)Heat up a flat griddle pan or even a large enough sauteeing pan will do for this. While it is heating, begin building the quesadilla!

Place the tortilla on a plate, then sprinkle half of the cheese on, then place the chicken strips spread out evenly covering only one half. (Like a taco, you will be folding it over)

Then spread the vegetables evenly and sprinkle with the rest of the cheese. You may now fold the tortilla over the filling side. Brush olive oil lightly on the griddle surface and carefully lift the quesadilla with both hands onto the hot surface. Press on it lightly while the cheeses glue this marvelous thing together.

When you can, after a minute, brush a little more olive oil on the top side and then flip over
