Directions:  
heat oven to 450. line a 13x9 inch pan with foil. spray with pam. spray another pan with pam.
in a small bowl, place crushed cereal. in another bowl, beat egg white and water until frothy. dip chicken into egg white mixture, sprinkle with cajun seasoning. roll chicken in cereal to coat and place in foil lined pan.
in second pan, toss all roasted ingredients including 1 tsp cajun seasoning to coat.
place both pans int eh oven. bake 18-23 minutes, stirring veggies once half way through baking time, until chicken is fork tenr and juices run clear and veggies are crisp tender.
