in a very large heavy pot use half the oil to brown all meat, add onion (that's simply one large onion) and garlic (3-5 minced cloves), cook till done

drain and rinse beans, add to pot

add all ingredients, except peppers, to pot, set to medium stir often

meanwhile wash, de-seed and cross-slice the peppers (that's simply one whole Anaheim pepper)

in a large hot skillet use remaining oil to sauté the sliced peppers, cook till very soft and browned, about 10 minutes, avoid breathing fumes, when done, add to chili

turn heat to very low, cover and simmer for 90 minutes. stir often enough to keep from sticking, about every 10 minutes.
