Directions:  
After shredding zucchini remove as much of the juice in collander or paper towels as possible. Add dry ingredients and mix to coat zucchini. Beat egg and pour on to Zucchini mixture anf stir. Spray grill with pam. Use a large cooking spoon to scoop about 1/4-1/3 c. of batter on to the grill. Uses the back of the spoon to spread thin (if left thick it will be gummy and under cooked in the middle). Brown, flip and serve. (I like to put applesauce and plain yogurt on mine. But low sugar jams is also good.)
